Welcome to the board and good luck with starting your class. I have never been to the classes but follow the diet plans through Rosemary Conley's books.
What is your target weight loss? Maybe you need to look at how you can change your regular eating habits to stop the weight going back on or if you stop after a month, try to maintain the weight after stopping, either by making sure you consume less and exercise more on a regular basis or by revisiting the diet when the weight starts to go up. I am prone to weight gain so when I stop dieting, my weight goes up but it does go up fairly slowly now so when I find my clothes are getting too tight, I go back on the diet again.
Feel free to post your weigh ins on here or your diet diary if that helps. I found listing what I ate helpful and also adding any new recipes I invented so that I can refer to them for next time.
