Hi

Just popped over from another board wondering if anyone has any advice......

Ive decided that I want to make my own wedding cake for next may for our 66 guests.

So, I would like to make individual fruit cakes and ice and decorate them and then have a small sponge cake on the top of a 6/7 tier acrylic stand.  What I would like to know is the best way to do the mini cakes?  Could I make some large cakes and cut out circles using a cutter of some kind of do I need to get a tray of mini tins to cook the cakes in?

Im confident I can make the cake as I have made/decorated quite a few xmas cakes and will be doing more this year.  Im plannig to use the same recepie too. 

Any ideas welcome

Hi,

i quite often make individual cakes, both fruit and fairy.

Beacuse i use butter in a rich fruit cake recipe it seeps through a lot of cases, but the metallic ones are fine. so if you want to present in a case then id suggest using them. I tend to use a round cutter for the layer of icing and marzipan and they sit in the case lovely. tHEY ALSO LOOK LOVELY WITHOUT CASES WITH A LITTLE RIBBON TIED ROUND (oops for caps!!!) the middle a bit like you would a frill.

i would recommend similar for sponge fairy cakes

hiya tammy,

that's a lovely idea - i wanted to make our cake myself when we got married in april 09 but as it was abroad it was too much hassle!

how about mini squares rather than circles? you can still cut them out just the same, but you'd have a lot less waste wouldn't you? and i like the idea of tying round them each individually with ribbon or a frill to pretty up the sides, but that could get quite fiddly...

hi

thanks for the tips.  i love the lake land tins for parties ect.  I have decided to get a silverwood mini cake tray set tho. basically a tray filled with mini cake rings that are quite deep.  going to use several designs to decorate as I want to try different ones - they will all fit with wedding colours tho. 

The xmas cakes I made last year were really nice (so Im told) only a bit on the crumbly side.  im wondering if this is beacuse i didnt feed them often enough with a drop of the ol brandy!  can that make them dry?  Im going to start my xmas cakes in Nov, so will try to get them 100% this year.  Im going to do a tray of mini ones to practice decorating - I cant wait!!!  Ill post some pics to get some feedback:)

As I said I will have a sponge cake on the top tier, but I was thinking I may add appox. 16 sponge mine cakes too.  Providing its not going to take too much time to do in the days before the wedding

talking of your mini wedding cakes...

i decided to do my christmas cake like that this year - going to make one big square one (this week), then feed it over & over, and then when i'm ready to decorate it, i'll cut it into the squares & ice each one individually.... very excited about that now!

what does your cake tray look like?

yes you should feed the wedding cake, if you don't it does tend to dry out.

i did have a thought - you could make & freeze your mini sponge wedding cakes in advance, then "all" you have to do is whip them out, defrost them, and decorate! would save a lot of brain stress in the days before, plus you can practice now?

another thought i had, you could have the large sponge top tier as flavoured, ie. chocolate, lemon or orange, and then the mini sponges as plain fairy cakes? am very excited for you lol!
