I noticed someone asking for an easy carrot cake recipe to use up lots of carrots, so heres mine

combine 150g plain flour

good sprinkle cinamon

1 tsp baking powder

1 tsp bicarb

150 g caster sugar

 

add in 250 g grated carrots

optional 50g chopped walnuts

 

add in the juice of one large orange which has been topped up to a level of 150 ml with corn oil.

plus 2 large sized beaten eggs.

 

mix all up, put in a big tin, best in one so a shallow mix, cook 160ish for about 45 mins, should cook nice and slow, very sloppy mix to start with.

 

topping

100 g unsalted butter

tub of philadelphia

200g icing sugar

tsp vanilla essence

mix like mad.....will take forever!

i sometimes use half the topping and cut the cake in half down the centre of tin so i can make a double layer then add the rest on top, sometimes just a lush topping.

keep in fridge because of cheesy topping.
