Hi I'm new to this board, have lurked now and again!

My husband has leaky gut syndrome caused by a build up of candida albicans (yeast infection)  he's been advised to change is diet and eliminate all sugars and yeast.  I was wondering if anyone on here has had similar experience and might have some interesting recipes.  He's existing in on chicken and potatoes and he is bored and I am bored making it every night!!

Any ideas greatfully received.

Thanks

Cheryl

Hi Cheryl,
Welcome to the board, feel free to lurk anytime but it's even better to post ;P as you will know, it's far too quiet on this board!
i did a search on the board for any previous posts about candida and these 2 recipes were posted a while ago by someone else (amanda_goddess), I'm sure she wont mind me copying and pasting them below for you. It might also be worth having a look and seeing if they have any cheap candida recipe books on amazon or somewhere.

Chicken Balti
Serves 4-6
2.5-3lb Chicken cut into pieces.
3tbsp oil.
3 medium onions, chopped
3 medium tomatoes, quartered
2 large black cardamoms pods
4 black peppercorns
0.5 tsp black cumin seeds
1 tsp ginger pulp
1 tsp garlic pulp
1 tsp garam masala
1 tsp chilli powder
1 tsp salt
2 tbsp natural plain yogurt
4 tbsp lemon juice
2 tbsp chopped fresh coriander
2 fresh green chillies, chopped.

Grind up the spices. I used the tubes of garlic / ginger that you can buy from the refrigerated sections in supermarkets.
Use the oil to fry up the onions until golden brown.
Add tomatoes and stir well.
Add cardamoms, peppercorn, black cumin, ginger, garlic, garam masala, chilli powder and salt.
Lower heat and stir fry for 2-3 minutes.
Add the chicken and stir fry for 5 minutes.
Add the yogurt.
Lower the heat and cover with foil, or a lid if you have one to fit your wok.
Simmer for 15 minutes.
Finally, add the lemon and fresh coriander and serve at once with brown rice.

This takes a few minutes to prepare all the ingredients, but cooks quickly.

Pasta with Chicken and Coquettes.
Durham Wheat Pasta (normal pasta) is out, but try a free form non gluten variety.
Serves 4 - unless your starving on a Canidida diet, then you'll eat at least half.

0.5 inch Garlic root. or paste to cheat.
3 red chillies
4 boneless chicken breasts
2.5 oz olive oil
Salt and pepper
3 tbsp fresh coriander - freeze dried will do
1 tbsp parsley - freeze dried will do
14 oz pasta
Parmesan cheese is optional for the family.

Arrange chicken breast on foil and sprinkle with chopped garlic, ginger and chillies.
Add olive oil.
Wrap tightly to form a parcel. place on baking sheet and cook in a gas5/180degree oven for 30 minutes.
Meanwhile thinly slice coquettes, potato peelers are good for this.
Cook in a little oil until just beginning brown.
Stir in herbs and cook briefly, then remove from the heat.
Cook the pasta, timing it to be ready just after the chicken. drain Pasta then return to the pan.
Remove the chicken from the oven and pour the juice into the pasta, or save until the pasta is cooked. Cut the chicken into pieces and add to the drained pasta, add the coquettes to the pasta and warm it all through if necessary.
Then serve.
