Sure, no probs Sam, though I'll warn you lol that I don't really measure stuff - it just gets chucked in!
Ok I use one baby chicken (feeds family of 4 for dinner and leftovers!), but you can use boneless chicken, cubed, say 2 portions +?:
1) Chuck about half a pack of butter (250g one) into a pan and melt
2) Chop 1-2 onions and add to butter, and brown
3) Add in chicken and stir fry still brownish...also add crushed garlic and ginger to taste (I used 3-4 cloves and about half an inch of ginger)
4) Add in chopped toms - either 3-4 fresh ones or half a can jobbie
5) Spices: Salt, Curry Powder, Ground Coriander, Turmeric and Chilli Powder - add all these to taste. Go easy on the chilli for kiddies, salt - your choice, other three about a teaspoon or more
6) Lots of stir-frying till toms are slightly reduced
7) Add 1-2 cups of water, bring to boil then lower heat and simmer
8) Stir frequently until the 'curry' is at required consistency and chicken is tender...if there's too much water, turn heat up, take lid off and reduce whilst mixing.
9) Add fresh chopped coriander leaves if you have them, for garnish. I buy/chop and freeze for future use.
I think that's pretty much it...This recipe can actually be used as a base for any curry but you substitute butter for a few tablespoons of oil.
